Discover the iconic Pornstar Martini
The Pornstar Martini; it’s one of our most popular cocktails on the menu… but do you know the story behind it?
Well, just in case you don’t – we’re here to tell you all about one of the nation’s favourite cocktails, and even how to make it just like we do.
You might know it as the Passionfruit Martini but its original inspiration was a South-African inspired cocktail named the Maverick Martini!
Originally created by Douglas Ankrah
In the late 1990s, Douglas Ankrah was the owner of LAB Bar in London – you probably know it as LABSoho (check out their IG here).
During a trip to Cape Town, South Africa where he was searching for inspiration for a new and iconic cocktail (little did he know), he visited several bars, one of which was a bar called, you guessed it… Mavericks.
Ankrah decided to combine three well popular flavours of the era; vodka, Prosecco and passion fruit. After a little play around with the measures, the Maverick Martini was created.
Changing the name
Whilst the cocktail proved to be an instant hit, Ankrah felt the name didn’t match up to the playful nature of the drink… so he changed it to something we’re all a little more familiar with – Pornstar Martini.
When asked about this change, he stated that the mix of passion fruits, vanilla vodka, and Prosecco felt like a drink that a pornstar might drink. He wanted a name that captured the “…pure indulgence, sexy, fun and evocative…” nature of the drink.
We might be biased, but we’re inclined to agree.
Removing the passion fruit
ICYMI, being green is a pretty big deal to us. In fact, back in December 2021 we removed the passion fruit garnish from our Pornstar Martini.
Not that we’re flexing, much, but in doing this we reduced our carbon footprint by over 100 tonnes of CO2. Pretty cool right.
The £180k that we saved by doing this has been reinvested into some pretty epic sustainability projects, as part of our Net Zero strategy.
What do you do with the Prosecco shot?
Back in the day, when your Martini did come with half a passion fruit, we would have said that your Prosecco goes into the passion fruit before you flip it over.
This is because the bubbles from the fizz help to release the flavours of the fruit into your drink – but now we’ve gone all sustainable there’s no set rules.
Shot it. Pour it. Sip it. It’s good however you enjoy it.

Got the taste? We got you. Here’s how to make your very own Pornstar Martini, the Revs way.
Ingredients
- 25ml Absolut Vanilia
- 25ml Absolute Passionfruit
- 50ml Orange Juice
- 50ml Passion Fruit Puree
- Dash of Ms Better’s Bitters
- 12.5ml Sugar Syrup
Garnish
- 25ml of Prosecco
- Pink Sherbert
Method
- Chill your Coupette glass with crushed ice and soda
- Add cubed ice to your Boston tin
- Add everything except the Prosecco and Pink Sherbet to the tin
- Shake hard for seven seconds
- Empty the ice and soda from the Coupette
- Double strain the ingredients in the Boston tin into the Coupette
- Garnish with the Pink Sherbet
- Sip and Enjoy
